本裝置利用油與水的密度的不同，在停留時間適當?shù)那闆r下， 使油與水沉淀分離，從而達到撇油的目的。

裝置分三個腔室，廚房灰水首入裝置腔室，在此 腔室內(nèi)灰水入口處有形擋板，降低了水的流速和含油污水的攪動。在腔室內(nèi)停留一定時間后，油脂將上浮， 分離后的水進入腔室。當繼續(xù)有灰水進入時，使腔室內(nèi)的水進入第三個腔室，油脂將保留在二腔室上部， 分離后的水從灰水排放水口處排出。
